OUR APPROACH TO
 SUSTAINABLITY

At Paula, sustainability starts with what we put on the menu. We use Danish wild game instead of farmed meat, sustainably caught seafood from Fiskerikajen, and mostly organic Danish seasonal vegetables.

Most of our suppliers are small, local producers. In short: we prioritise quality, animal welfare, and responsibility at every step.

OUR MANIFESTO

In the LOCA Group, we operate by one simple principle:
“Every Meal Matters.”
That applies to the ingredients. The people who grow and prepare them. And the world that each meal becomes part of.

We know that no one can do everything –
but everyone can do something.

That’s why, in 2021, we created our Manifesto for Sustainable Gastronomy – a set of values that guide our business and our industry.

For food to truly be sustainable, it must nourish, delight, while also passing something on to the next generation – including those who cook and serve it.

OUR GOALS

Each year, the LOCA Group publishes a sustainability report with tangible data and clear goals. Our efforts – and our progress – are made measurable, so we can improve and push ourselves further.

We know we’re not perfect. But with integrity, flavour, and strong values, we believe that we can contribute to meaningful change.
