REGENERATIVE GREENS FROM LEJRE
Most of Paula’s vegetables come from Godis Grønt, an organic farm in Lejre where Christina and Fredrik grow more than 60 different crops using regenerative methods that enhance soil fertility and promote biodiversity. This passion for living soil and the short distance from field to plate perfectly embodies the LOCA Manifesto’s principles of food that cares for both nature and people.

POTATOES WITH HISTORY & CARE
On the former seabed soils by Odense Fjord, Sanderumgaard grows unique potatoes with a golden hue, smooth skin, and delicate flavor. The potatoes benefit from a gentle cultivation method with reduced tillage, which preserves the soil’s natural moisture, enhances biodiversity, and lowers the climate footprint. All the wild game at Paula comes from Nordvildt, a company run by passionate hunters in North Zealand who have deep knowledge of the land and its animals. In a former apple orchard near Præstø, Charlotte and Frederik grow vegetables, herbs, and edible flowers following organic and regenerative principles that improve soil health and reduce the CO₂ footprint. HAND-SELECTED SUSTAINABLE CAVIAR
GastroUnika produces exclusive caviar from sustainable farms where sturgeons live under natural conditions in mountain lakes and spring water basins in the forest. The caviar is made without preservatives and with full traceability. BIODYNAMIC PIONEERS
Aurion was founded in 1974 by the idealists Inger and Jørn Ussing Larsen, who became pioneers of biodynamically grown grains in Denmark – long before organic became a familiar concept. Through their passion for ancient grains, uncompromising quality, and a strong focus on regenerative agriculture, Aurion has set the standard for organic and biodynamic grain production in Denmark for decades.
